Ham and Bean Soup

Simple and delicious ham and bean soup, made in the slow cooker.

Ingredients

  • 1 ham bone leftover
  • 1 cup onion white, diced
  • 2 cups russet potato diced
  • 3 cups carrot frozen, mix
  • 3 cups green pea
  • 3 cups corn
  • 3 cups lima bean
  • 2 cups white kidney beans drained and rinsed (about a 15 ounce can, canned
  • 1 teaspoon thyme dried
  • 1 tablespoon garlic minced
  • 2 bay leaf
  • salt to taste
  • black pepper to taste
  • 6-8 cups chicken broth
  • 2 cups ham diced (removed from the hambone or leftover

Instructions

  1. Place the hambone, onion, potatoes, frozen vegetable mix of choice, kidney beans, thyme, garlic, bay leaves and salt and pepper into a large slow cooker. Add enough chicken broth to cover the ingredients.
  2. Cook on low for 8-10 hours, on or high 5-6 hours until the potatoes and onion are cooked.
  3. Remove the ham bone from the soup and cut off any extra meat. Add the meat to the pot, along with the diced ham. Heat through completely, then serve.
  4. Serve immediately.
