Healthy Buffalo Chicken Dip
Description
This recipe starts by combining softened neufchatel cream cheese with Greek yogurt to create a lighter creamy base. Frank's RedHot Buffalo Wings Sauce adds the signature spicy kick, while garlic and onion powders provide depth and black pepper balances the seasoning. Shredded cooked chicken and scallions are folded into the mixture to add protein and texture. The dip is then transferred to a baking dish and topped with shredded cheddar cheese.
Baking the dip at 400°F melts the cheese into a golden, bubbly topping while warming the mixture through, integrating flavors nicely. Optional additional toppings like crumbled blue cheese, scallions, and extra hot sauce add a typical buffalo flavor profile. The texture is creamy with tender chicken pieces distributed throughout and a melted cheese crust on top.
Serve this dip warm with crackers, chips, celery, or carrot sticks for dipping. It is filling and can be prepared in advance, making it practical for entertaining or casual snacking.
Notes indicate adjusting hot sauce to taste and mention the dip's suitability for make-ahead preparation and freezing. To freeze, assemble the dip in a freezer-safe dish, cover tightly, and freeze up to 3 months. Thaw in refrigerator overnight before baking. Leftovers store well refrigerated and reheat in microwave or oven.
