Healthy Caesar Dressing
Description
This Healthy Caesar Dressing is made by combining garlic, fresh lemon juice, extra virgin olive oil, anchovy paste or filets, Worcestershire sauce, Greek yogurt, Dijon mustard, and Parmesan cheese into a blender. The ingredients are processed until smooth, ensuring all flavors blend evenly to create a creamy and tangy dressing.
The Greek yogurt provides a lower-fat alternative to conventional Caesar dressings while delivering a silky texture. Anchovy paste contributes to the savory umami depth characteristic of Caesar dressing, balanced by lemon juice's acidity and mustard's sharpness. The Parmesan adds a rich, cheesy note that ties the flavors together.
This dressing works well over traditional Caesar salad greens or as a dip for vegetables. It can be adjusted in thickness by thinning with water as needed for personal preference or salad texture.
