Healthy Chicken Shawarma Bowls

Healthy Chicken Shawarma Bowls feature spiced grilled chicken seasoned with coriander, cumin, and smoked paprika, served atop lemony cauliflower rice with fresh tomatoes, cucumber, and chickpeas. A tangy, spiced Greek yogurt and tahini sauce adds creaminess and flavor, completing this balanced and flavorful meal bowl.

Description

This recipe layers marinated chicken breast with a blend of warm spices such as coriander, cumin, smoked paprika, oregano, garlic powder, and cayenne pepper, cooked until tender and diced. The cauliflower rice is sautéed with complementary spices along with lemon zest and juice to create a citrusy base. Topped with fresh cherry tomatoes, diced cucumber, and chickpeas, it brings texture and freshness.

The spiced Greek yogurt sauce with tahini, lemon juice, and ground spices adds a creamy, zesty element that pairs well with the savory chicken and vegetables. Assembling all components into bowls makes a colorful, nutrient-rich dish suitable for a main course.

For a more substantial meal, the cauliflower rice can be substituted with whole grains like brown rice or farro. The sauce can be made ahead and refrigerated to streamline preparation on serving day.
