Ingredients

  • 1 3/4 cups white whole-wheat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups ripe banana, mashed
  • 1/2 cup coconut oil melted
  • 1 egg
  • 1/4 cup honey
  • 1 tablespoon vanilla
  • 1/3 cup mini dairy-free chocolate chips

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit and spray a muffin pan with cooking spray.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt.
  3. In a separate bowl, whisk all the remaining ingredients except the chocolate chips.
  4. Whisk the flour mixture into the wet ingredients until just combined. Don't over mix. Gently stir in the chocolate chip.
  5. Spoon into 11 muffin tin cavities; they should be about 2/3 of the way full.
  6. Bake for 5 minutes. Then, lower the heat to 375 degrees Fahrenheit and bake for 12-14 minutes, until a toothpick inserted comes out clean.
  7. Let cool completely in the pan before serving.
