Ingredients

  • 2 cups old fashioned oats
  • 1 cup all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup butter
  • 1 cup pumpkin puree
  • 1 large egg room temperature
  • ¼ cup dried cranberries
  • ¼ cup raisins
  • ¼ cup Chopped Pecans

Instructions

  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
  2. Combine oats, flour, pumpkin pie spice, cinnamon, baking soda, and salt in a bowl. Set aside.
  3. Beat sugar and butter with a hand mixer until fluffy. Mix in pumpkin and egg.
  4. Add the pumpkin mixture and mix until combined. Fold in cranberries, raisins, and pecans.
  5. Scoop 2 level tablespoons of cookie dough into a ball and place on a baking sheet 2 inches apart. Use a fork to flatten to a ½" thickness.
  6. Bake for 9 to 11 minutes or until set.
  7. Cool on wire racks.

Notes

  • Store these cookies in an airtight container or a freezer bag. They will keep in the refrigerator for a week.
  • To freeze make sure they are fully cooled and place them in an airtight container and freeze for up to 4 months.
