Description
This Hollandaise Sauce is prepared by blending together egg yolks and lemon juice with melted butter added slowly to create a thick, smooth emulsion. The process of blending at high speed helps achieve the characteristic pale yellow and creamy texture. The sauce is flavored simply with salt and a slight hint of Tabasco sauce for balanced heat and tang.
The final sauce is creamy and rich, with a subtle citrus brightness from the lemon juice. Its smooth consistency and mild spice make it a classic complement for dishes like eggs Benedict, steamed vegetables, or poached fish.

Ingredients
- 1/2 cup butter melted
- 3 egg yolk
- 1 tbsp lemon juice
- 1/8 tsp Tabasco sauce
- 1/8 tsp salt
Instructions
- Melt the butter and remove from heat and set aside.
- Add remaining ingredients to a cup that an immersion blender (also called stick blender, wand blender, hand blender) fits into or a blender and blend at high speed until a pale yellow.
- Slowly add the melted butter until fully incorporated and thick on Low speed.
- The result should be a creamy sauce. Season to taste. Scrape the sides of the cup/blender and pour into a serving dish. Serve immediately.
