Description

This recipe starts by dissolving pickling salt in boiling water to create a brine for the pitted sweet cherries, which soak overnight to enhance texture and reduce bitterness. After discarding the brine and rinsing the cherries, a syrup is made by boiling sugar with lemon juice and red food coloring, then poured over the cherries and left to infuse for a day. The syrup is then drained, boiled again, and combined with almond extract before being poured back over the cherries for their final preservation in sterilized jars.

The process results in cherries that are plump, glossy, and imbued with a characteristic maraschino almond flavor and bright red appearance. They can be stored sealed and used as toppings for desserts or mixed into drinks.

Ingredients

  • 2 liters of water
  • 1 tablespoon pickling salt
  • 2 kg Cherry pitted, sweet
  • 2 kg sugar
  • 3 cups water
  • lemon juice of one
  • 30 ml red food coloring
  • 30 almond extract

Instructions

  1. In a large pot boil water and salt, stirring until the salt is dissolved.
  2. Allow to cool for 10 minutes – pour this over the pitted sweet cherries.
  3. Cover and set aside 12 hours or overnight.
  4. Drain cherries, discard the brine and rinse well in cold water.
  5. Set aside.
  6. In a medium-sized pot, mix the sugar, the lemon juice and the red food coloring together and just-just bring to a boil, stirring well to dissolve sugar.
  7. Remember remove from heat as soon as the sugar is dissolved.
  8. Pour over the cherries, cover, and let stand for 24 hours.
  9. Drain cherries but reserve the juice.
  10. Set cherries aside.
  11. Bring the reserved juice to a boil again, remove from heat and stir in the almond extract that you pour over the cherries.
  12. Pack the cherries and the juice in hot sterilized jars and seal well.
