Description
This Homemade Creme Fraiche recipe involves mixing heavy cream with buttermilk or sour cream as a starter culture and letting the mixture rest in a clean glass container at room temperature for 12 to 48 hours. During this period, natural fermentation thickens the cream and develops its characteristic tangy flavor. Once desired thickness is reached, refrigerating will halt fermentation and preserve the creme fraiche for up to 10 days.
The texture is smooth and creamy, ideal for dolloping on soups, desserts, or using to enrich sauces where a less sour and thicker cream alternative is preferred.
Stirring the mixture while it thickens is acceptable and does not disrupt fermentation, making the process flexible. Freezing creme fraiche is not advised as it affects texture and quality. To achieve thicker consistency, allow it to ferment longer at room temperature before refrigeration.
Ingredients
- 1 cup heavy cream 120g, at least 30% fat
- 2 tbsp buttermilk or sour cream, 30 mL

- Cover with plastic wrap or lid, and let thicken at room temperature for 12-48 hours.
- Store creme fraiche in refrigerator for up to 10 days.
