Ingredients
- 1 cup coconut milk,
- 1 1/2 cups Frozen Fruit, slightly thawed
- 2-4 tbsp honey (maple syrup or agave)
Instructions
- In a high-powered blender, add the slightly thawed fruit chunks, coconut milk, and honey.
- Blend until smooth. Add more coconut milk if needed to help blend.
- Taste and add additional honey if needed. Sweetness level depends on personal preference. It also depends how sweet the frozen fruit was to begin with.
- Pour the mixture into the popsicle molds dividing them evenly. Insert the sticks and freeze 3-4 hours or until completely firm.
- Carefully release the popsicle from the molds. You may need to hold your warm hand on the mold to help release the popsicle. Running cool water on the mold will help as well, just be careful not to get water on the popsicle.
- Store leftover popsicles in an airtight container in the freezer.
