Homemade Salsa Recipe (Pico de Gallo)
Description
The salsa starts with tomatoes of different sizes and types—Roma, cocktail, and grape—roughly diced for textural variety. Red onion, garlic, and cilantro add aromatic notes and complexity, while diced jalapeño provides controlled heat, adjustable by quantity.
Lime juice is squeezed in to bring acidity and brightness that complements the sweetness of tomatoes and the freshness of herbs. Kosher salt and freshly ground black pepper season the mixture to round out the flavor.
This fresh salsa is a staple topping for tacos or can be served as a side dip. It is best prepared fresh but can be refrigerated for up to three days, allowing flavors to meld.
Taste testing the jalapeño before adding it allows adjustment for preferred spice level. Additional lime juice can be added to balance flavors after mixing.
Ingredients
- ~700 grams tomato roughly diced, 4 roma (400g), 3 cocktail (200g), 8 grape (90g

- 3 garlic minced, cloves
- 38 grams cilantro finely chopped, fresh
- 1 (61g) jalapeño , finely diced
- 80 grams lime juice from 1-2 fresh
- kosher salt
- ground black pepper to taste
Instructions
- Prepare Salsa Ingredients: Prepare the ingredients by cutting from driest to wettest.
- Make Salsa Fresca: Add diced tomatoes, diced red onions, minced garlic, and chopped cilantro into a large mixing bowl. Mix well. Taste one piece of finely diced Jalapeno to determine the spiciness level. Add in the amount of Jalapeno based on your personal preference (we added roughly 3 tbsp). Mix well.Squeeze juice from 1 lime and mix well.Season with Kosher salt & fresh ground black pepper. Mix well. Taste and adjust accordingly. Make sure everything is balanced. Add in the juice from another lime if necessary.
- Serve Salsa: Serve on top of tacos or as a side dish. It can be stored in the fridge for up to 3 days.

- Taste the finely diced jalapeño to gauge spice level before adding, adjusting as preferred.
