Ingredients
- 2 pounds pork roast
- 4 tablespoons honey
- 1 tablespoon chipotle puree
- 1 teaspoon chopped cilantro
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon chipotle hot sauce
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 clove minced garlic

Instructions
- Preheat oven to 350 degrees Fahrenheit and spray a 9x13-inch baking dish with non-stick cooking spray.
- Place 2 pounds pork roast in the prepared baking dish, fat cap side up. Using a knife, cut a criss-cross pattern into the top of the roast through the fat layer.
- In a bowl mix the 4 tablespoons honey, 1 tablespoon chipotle puree, 1 teaspoon chopped cilantro, 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon chipotle hot sauce, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 clove minced garlic.
- Spread half of the chipotle mixture over the pork and bake for 40 minutes.
- Cover the roast with the remaining chipotle sauce and bake for an additional 35-40 minutes until it reaches an internal temperature of at least 145 degrees Fahrenheit.
- Remove from oven and let it rest for 5-10 minutes before slicing and serving.
