Ingredients
- 4 boneless, skinless chicken breast
- 1 tbsp olive oil
- kosher salt and pepper to taste
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp herbes de provence or Italian Seasoning
- 1/4 cup honey
- 3 tbsp whole-grain dijon mustard
- 1 tbsp low-sodium soy sauce
Instructions
- Heat an outdoor grill or a grill pan over medium-high heat.
- Rub the chicken breasts with the oil and seasonings.
- In a small bowl, whisk the honey with mustard and soy sauce.
- Pour 1/2 of this mixture over the chicken and stir to coat. Allow the chicken to reach room temp, by sitting for 15 minutes on the counter and in the marinade. Reserve the remaining 1/2 of the honey-mustard sauce to use as a dip (Make sure this mixture doesn't touch the raw chicken!).
- Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165 degrees F.
- Once the chicken is done grilling, allow it to sit for 5 minutes before slicing. Serve with the remaining honey-mustard sauce.
Notes
- Place leftovers in an airtight container or in a ziplock bag. They will keep in the fridge for up to 3 to 4 days. You can also freeze the chicken in a freezer-safe container or bag for up to about 3 months.
