Horseradish Cream Sauce

Horseradish Cream Sauce blends sour cream, mayonnaise, lemon juice, kosher salt, black pepper, and prepared horseradish for a tangy, creamy condiment with a gentle heat. Fresh chopped chives add a mild onion note and color. The sauce serves well chilled or at room temperature alongside robust dishes like corned beef, steak, or pot roast, adding brightness and spice to meat-centered plates.

Description

This sauce begins by mixing sour cream and mayonnaise with freshly squeezed lemon juice, kosher salt, and black pepper. Prepared horseradish is drained and pressed through a strainer to remove excess moisture, concentrating the pungent flavor before incorporation. The mixture is whisked together until smooth and finished with fresh chopped chives for mild vegetal freshness. The sauce achieves a creamy yet zesty profile balanced between the cool dairy and the sharp horseradish heat.

Horseradish Cream Sauce pairs with savory dishes like corned beef and cabbage, steak, or pot roast, where the piquant creaminess can complement rich or fatty meats. It can be served cold or at room temperature and keeps refrigerated for up to two weeks under cover. This makes it a convenient make-ahead accompaniment or condiment for hearty meals.
