How to Boil Chicken

This easy boiled chicken recipe creates tender juicy chicken meat and a flavorful broth.

Ingredients
- 1 whole chicken 3 to 4 pounds
- 1 ½ onion divided
- 3 carrots include tops if you have them
- 2 ribs celery
- 6 prigs fresh herbs any combination of thyme, rosemary, parsley, sage
- 3 prigs fresh parsley
- 2 bay leaves
- 1 tablespoon black peppercorns
- 2 teaspoons salt
- water
Instructions
- Cut 1 onion, the carrots and the celery into quarters (include the tops of the carrots and celery if you have them)
- Place the ½ onion into the cavity of the chicken.
- Place chicken in pot and add vegetables, fresh herbs, bay leaves, peppercorns and salt. Add enough water to cover the chicken.
- Cover pot and bring to a boil over high heat. Once boiling, turn heat down and simmer partially covered for 1 ½ – 2 hours.
- Remove chicken, allow to cool then remove meat from bones.
- Strain and reserve broth.
