Starting with canned chickpeas, tahini, olive oil, minced garlic, lemon juice, salt, and ground cumin, this hummus comes together by pulsing the ingredients in a food processor or blender. Adding ice-cold water gradually helps to thin and smooth the mixture, resulting in a creamy, spreadable consistency without graininess.
The flavor balance is mildly tangy from the lemon and earthy from the chickpeas and tahini, with garlic and cumin adding layers of warmth and aroma. Finished with a drizzle of olive oil and optional parsley garnish, it suits dipping vegetables or spreading on bread.

Ingredients
- 15 ounces chickpeas also known as garbanzo beans, canned
- 2 ½ tablespoons tahini
- 3 tablespoons olive oil
- 1 clove garlic minced
- ¼ teaspoon salt or to taste
- ½ lemon juiced, about 2 tablespoons
- 1 teaspoon cumin
- olive oil and parsley for garnish
Instructions
- Fill a small measuring cup with ice and add water. You'll need about ¼ cup of really cold water.
- Add all ingredients to a blender or food processor except water.
- Pulse a few times to get the blending started, scraping the sides as needed. Drizzle in the ice water a bit at a time (about ¼ cup or so) until the mixture is very smooth, about 3-4 minutes.
- Transfer to a serving bowl and drizzle with olive oil and garnish with parsley and a sprinkle of paprika or cumin.
Notes
