Description
The salad features a mix of green and purple cabbage, red and green peppers, carrot, and red onion, all finely sliced for a crisp texture. A tempering is prepared by heating neutral oil until shimmering, then adding black mustard seeds until they begin to pop, which is then removed from heat to add asafetida, turmeric, and red chili powder. This aromatic oil mixture is poured over the raw vegetables to lightly cook the spices and distribute their flavors. Salt and freshly squeezed lemon juice finish the dish, balancing the spices with acidity. The result is a flavorful, crunchy salad with a distinctly Indian spice profile.
This salad works well alongside richer or heavier dishes, offering a fresh and tangy contrast. It can be served immediately to enjoy the crispness or briefly chilled.
Ingredients
- 2 cups green cabbage thinly sliced and chopped
- ½ cup red pepper thinly sliced
- ½ cup green pepper thinly sliced
- ½ cup carrot julienned
- ½ cup red onion thinly sliced
- ½ cup purple cabbage optional, thinly sliced and chopped
- 1½ tablespoons neutral cooking oil generic cooking oil
- 1 teaspoon black mustard seeds
- ¼ teaspoon asafetida
- ½ teaspoon Turmeric ground
- ½ teaspoon red chili powder
- 1 teaspoon kosher salt
- 1 lemon cut into half & juiced
Instructions
- Mix all the veggies in a medium bowl.
- Heat oil in a small saucepan over medium heat. Once the oil is hot and shimmering, add mustard seeds. Turn the heat off as the mustard seeds start to pop. Add asafetida, turmeric & red chili powder.
- Pour this tempering over the veggies. Add salt and lemon juice. Mix well and enjoy.
