Instant Pot Arroz Con Leche

Instant Pot Arroz Con Leche is a creamy rice pudding made with evaporated milk, whole milk, long grain rice, and cinnamon cooked under pressure for convenience. Sweetened condensed milk adds richness and sweetness, with optional raisins providing texture. This traditional dessert is simplified by using the Instant Pot to cook in one vessel, offering a creamy texture with cinnamon's warm spice.

Description

This recipe combines water, evaporated milk, whole milk, rice, and salt in an Instant Pot, adding cinnamon sticks or ground cinnamon for flavor. The mixture is pressure cooked for 20 minutes using a porridge setting or manual high pressure. After a natural release and quick pressure release, sweetened condensed milk is stirred in to taste, sweetening the pudding and adding creaminess.

The pudding is served warm and topped with ground cinnamon, showcasing a soft yet slightly textured consistency from the rice, contrasted by the spicy sweetness of cinnamon. Using an Instant Pot streamlines the process, reducing active cooking while maintaining the dish's classic creamy quality.

The optional raisins rehydrate during cooking, adding bursts of sweetness and chewiness to the pudding. The controlled cooking environment helps avoid sticking or burning while infusing the cinnamon flavor thoroughly.

Ingredients

Servings
  • 3 cups water
  • 1 (12 oz) evaporated milk canned
  • 1 cup milk whole or 2%
  • 1 cup long grain rice
  • teaspoon salt
  • 2 cinnamon stick or 1 teaspoon ground cinnamon
  • 1 (12 oz) sweetened condensed milk
  • ½ cup raisins (optional)

Instructions

  1. Add water, evaporated milk, whole milk, rice, and salt to the instant pot. Stir to combine. Place the cinnamon sticks on top (if you're using ground cinnamon, stir it in with the other ingredients).
  2. Place the lid on, making sure that the pressure release valve is in the sealing position.
  3. Select the [PORRIDGE] function for 20 minutes (or press PRESSURE COOK/MANUAL on high pressure for 20 minutes).
  4. When the time is up, let the pressure naturally release for 10 minutes, then quick release the remaining pressure.
  5. Add sweetened condensed milk to taste (start with ¼ of the can, taste and add more, if needed).
  6. Serve warm topped with ground cinnamon.
