Instant Pot Artichokes
Description
This recipe uses fresh artichokes that are washed and optionally trimmed. They are placed on a steamer rack inside the Instant Pot with water below and pressure cooked for 8 to 9 minutes depending on size. The pressure cooking quickly softens the fibrous artichokes, including the heart. While cooking, garlic is sautéed in melted unsalted butter to create a dipping sauce, which can be flavored with lemon juice to slow oxidation of cut artichokes.
The result is artichokes with tender leaves and a soft, creamy heart, ideal for dipping into the warm, fragrant garlic butter. The texture is creamy and moist, with the pressure cooking ensuring even tenderness without long steaming times.
For a vegan alternative, olive oil can substitute for butter in the dipping sauce. Larger artichokes may require longer cooking times to reach optimal tenderness. Handling carefully after pressure release preserves their structure.
Ingredients
- 2 (½ lb, 250g each) Artichoke 11" circumference
- 4 cloves (13g) garlic , minced
- 2 tablespoons (30g) butter unsalted
- kosher salt about 2 pinches, to taste
- lemon juice from 1 lemon, optional
Instructions
- Wash Artichokes: Submerge artichokes in cold water for 5 minutes.
- Optional - Prep Artichokes: Cut stem off and trim about 1 inch off the tip of the artichokes.
- Place Artichokes in Instant Pot: Place 1 cup of cold water and a steamer rack in Instant Pot Pressure Cooker. Place 2 whole artichokes on the steamer rack. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Optional: If you like, squeeze some lemon juice on the artichokes to slow the rate of oxidation.
- Pressure Cook Artichokes: Pressure cook a) Trimmed Artichokes: High Pressure for 8 minutes + Quick Release ORb) Uncut Whole Artichokes: High Pressure for 9 minutes + Quick Release c) For Large Artichokes: Increase the pressure cooking time accordingly.Open the lid carefully.
- Prepare Garlic Butter: While the artichokes are cooking in Instant Pot, heat a saucepan over medium-low heat. Melt 2 tbsp (30g) unsalted butter and add in the minced garlic. Sauté garlic until golden brown. Do not let the garlic burn. Set aside to cool it down slightly. Season with kosher salt and adjust to taste (about 2 pinches).

Notes
- Increase cooking time for larger artichokes or softer hearts.
- Use olive oil instead of butter for a vegan dipping sauce.
