Description

This recipe starts optionally by roasting bones at 450°F for 20 minutes to deepen flavor. Bones are placed in the Instant Pot with water, apple cider vinegar, diced onion, bay leaves, thyme sprigs, and diced celery. The pressure cooker is sealed and cooked on high pressure anywhere from 1 to 4 hours depending on the type of bones used: 1 hour for whole chicken with meat and skin, 2 hours for beef or pork bones with meat, or 4 hours for bones only.

After natural pressure release, bones are removed, and salt and black pepper are added to taste. The broth is strained into jars and cooled before refrigeration or immediate use. The acid helps break down mineral and collagen content, resulting in a flavorful, gelatinous broth.

This broth provides a nourishing base and highlights the collagen from various bones and aromatics used, suitable for multiple culinary uses that call for rich stock.

  • 3- 4 pounds of bones including skin if there is any left
  • water cold
  • 1/4 cup apple cider vinegar
  • 1 onion diced
  • 2 bay leaf
  • 4 thyme sprigs, fresh
  • 2 celery diced, stalks
  • salt to taste
  • black pepper to taste

Instructions

  1. If roasting bones roast at 450 degrees for 20 minutes.
  2. Place bones in pressure cooker
  3. Add 4 cups of water enough to cover most of the bones
  4. Add apple cider, bay leaves, thyme and celery
  5. Place lit on pressure cooker and ensure vent is locked
  6. On high pressure cook until desired time 1 hour up to 4 hours). See below recommendation.
  7. Let the pressure naturally release
  8. Remove large bones
  9. Add salt and pepper to taste
  10. Strain broth into mason jars
  11. Cool before refrigerating or use right away

Notes

  • Use whole chicken bones with some meat for a 1-hour pressure cook to get tender broth.
  • For beef or pork bones, cook for 2 hours on high pressure to fully extract flavor.
  • Pure bones without meat require 4 hours at high pressure to develop depth in the broth.
