Description
In this recipe, bone-in chicken legs are partially submerged in a master stock combining regular and dark soy sauces, garlic, star anise, Sichuan peppercorn, and water inside the Instant Pot. The combination of aromatic spices softens and flavors the chicken during high-pressure cooking. Jasmine rice is cooked in a separate bowl placed on a steamer rack above the chicken, allowing it to steam with the fragrant broth’s essence.
Following pressure cooking, a mixture of dark soy sauce and master stock is applied to the chicken legs to deepen the color and add savory complexity. The rice is fluffed and served alongside the chicken, creating a convenient and flavorful single-dish meal.
The dish works well paired with simple vegetables or steamed greens to balance the rich soy flavors. The leftover master stock can be refrigerated or frozen for future use, maintaining its aroma and taste for other soy sauce dishes.
Ingredients
- 8 chicken leg bone-in
- 1 tablespoon dark soy sauce
Master Stock Mixture
- 3 tablespoons (45ml) soy sauce regular
- 1/2 tablespoon (7.5ml) dark soy sauce
- 4 cloves garlic , crushed
- 3 star anise
- 1/2 teaspoon Sichuan peppercorn Chinese: 花椒
- 3/4 cup (188ml) water cold
Rice
- 1 cup (230g) jasmine rice
- 1 cup (250ml) water cold
Instructions
- Make Master Stock Mixture: Add 3 tbsp regular soy sauce, ½ tbsp dark soy sauce, 4 garlic cloves, 3 star anise, ½ tsp Sichuan pepper, and ¾ cup cold water in Instant Pot.
- Pressure Cook Chicken and Rice: Partially submerge the chicken legs into the Master Stock Mixture. Add a tall steamer rack and place a stainless steel bowl filled with 230g Jasmine rice and 250ml water. Close the lid and turn the Venting Knob to Sealing Position. Pressure cook at High Pressure for 8 minutes + 10 minutes Natural Release. Open the lid carefully. Fluff & set aside the cooked rice and rack.
- Apply Master Soy Sauce: In a small mixing bowl, mix 1 tbsp dark soy sauce with 1 tbsp Master Stock Mixture. Apply the master soy sauce on the chicken legs to give it additional color and flavor.
- Serve: Serve the soy sauce chicken over rice with your favorite vegetables.
Notes
- Store leftover master stock in the refrigerator or freezer to reuse in other soy sauce dishes.
- After cooking, fluff the jasmine rice before serving to separate grains.
- Brush the chicken with the dark soy sauce mixture for enhanced color and flavor.
