Instant Pot Stuffed Pepper Soup
Description
The Instant Pot Stuffed Pepper Soup uses ground beef seasoned with onion powder, garlic powder, smoked paprika, Italian seasoning, salt, and black pepper as a flavorful base. Once browned in the sauté function, the ground beef is combined with diced red and green bell peppers, beef broth, tomato sauce, Worcestershire sauce, and uncooked long-grain white rice. Cooking everything at once under pressure allows the rice to cook through while infusing the soup with the savory flavors of the meat and vegetables.
The soup results in a thick, hearty meal with tender rice and soft chunks of bell pepper distributed throughout a rich tomato and beef broth. The seasoning blend echoes the flavor profile of traditional stuffed peppers, bringing aromatic herbs and smoky notes to the soup.
This soup is best served warm, making it suitable for a filling lunch or dinner. It offers a quicker alternative to the traditional stuffed pepper recipe by skipping the assembly and bake time while preserving familiar flavors in a satisfying bowl.
