Israeli Salad with Feta Cheese and Mint
Description
This salad features diced Persian cucumbers, ripe tomatoes, and diced red and yellow bell peppers which provide a mix of textures and bright colors. Fresh chopped mint offers a cool, herbal note that complements the vegetables. The dressing combines extra virgin olive oil and freshly squeezed lemon juice, seasoned with salt and a pinch of cinnamon which adds an unexpected mild warmth and depth to the flavor profile. The mixture is tossed thoroughly, and crumbled feta cheese is folded in, giving a creamy, tangy element that balances the fresh vegetables and herbs.
The salad is best served chilled or at room temperature and pairs well with grilled meats, pita bread, or as a refreshing plate alongside heavier dishes. Its crunchy vegetables and fresh herbs make it a versatile and healthy addition to any meal.
