Italian Apple Cake Recipe

Italian Apple Cake combines tender pieces of apple with a spiced, cinnamon-infused batter enriched with yogurt and butter. This cake has a moist texture, enhanced by the fresh apples and balanced leavening from baking powder. The recipe features creaming eggs and sugar until fluffy, then folding in dry ingredients gently with the apples to maintain a light crumb. A dusting of confectioners’ sugar adds sweetness to the finished cake.

Description

This Italian Apple Cake recipe calls for peeled and chopped apples folded into a batter made by creaming eggs and sugar until light and fluffy, then combining with yogurt, melted butter, and vanilla. The dry ingredients—flour, cinnamon, baking powder, and salt—are folded in gently to preserve airiness. The mixture is poured into a prepared pan and baked at 350°F until a toothpick inserted comes out clean, with a tentative 45-minute bake time adjusted depending on the juiciness of the apples.

The cinnamon adds warmth to the moist, mildly sweet cake, where the tender apple pieces provide bursts of fruit throughout. Dusting with confectioners’ sugar finishes the cake with a light sweetness that complements the fruit and spices. This cake can be enjoyed alone or with whipped cream for a simple dessert.

The notes advise that apple moisture affects baking time, sometimes requiring an additional 10 minutes in the oven to fully cook the center without overbrowning the top. Covering with foil is recommended if browning too quickly.

Ingredients

Servings
  • 3 large apple peeled if desired, cut into pieces
  • 2 cups all-purpose flour 240 g
  • 3 teaspoons baking powder 14 g
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon kosher salt
  • 1 cup granulated sugar 200 g
  • 1 cup whole milk yogurt plain
  • ½ cup butter 113 g, melted and cooled
  • 2 large egg
  • ½ teaspoon vanilla extract 2 g
  • confectioner sugar for dusting

Instructions

  1. Line a 9.5 inch round baking pan with parchment paper, or spray with cooking spray. Preheat oven at 350 degrees F
  2. In a large mixing bowl, with an electric mixer, cream the sugar and eggs until you obtain a creamy and fluffy texture. About 5-8 minutes.
  3. Stir in the yogurt, butter, and vanilla extract. Use a fork or spatula to combine until smooth (not the electric mixer).
  4. In a separated bowl mix the dry ingredients: flour, cinnamon, baking powder and salt.
  5. Add the dry ingredients to the wet mixture. Stir gently until well combined. Add the apples and mix gently. Pour the batter into the prepared pan. Bake 45 minutes or until a toothpick comes out clean*. If the cake starts to brown too much on top tent with the top with foil during the last 10 minutes of cooking.
  6. Cool and dust cake with confectioner sugar. If desired, serve with freshly whipped cream. Enjoy!

Notes

  • The moisture level of the apples affects baking time; you may need to add 10 minutes if apples are very juicy.
  • To prevent overbrowning, tent the cake with foil during the last 10 minutes of baking if needed.
