This unique dessert involves melting dark chocolate, butter, and milk to create a smooth base, which is then combined with broken tea biscuits, cocoa powder, sugar, salt, and optionally toasted almonds. The biscuit pieces add a crunchy texture breaking through the rich chocolate mixture. Forming the mixture into a log on parchment paper and chilling it solidifies the shape and allows flavors to meld. Rolling the chilled log in powdered sugar gives it the characteristic look of traditional salami.

  • ounces dark chocolate good quality, melted
  • ¼ cup milk
  • 7 tablespoons butter soft
  • 2 cups tea biscuits broken
  • ¼ cup sugar fine
  • ¼ cup dutch-processed cocoa powder unsweetened, sifted
  • 1 pinch salt
  • ¼ cup almonds finely chopped, optional

*If using unsalted butter then add ¼ teaspoon of salt. Be sure to use a good quality butter, apparently this year 2022, store brand butter quality is not what it used to be. Less fat could mean a dry not so tasty cookie.

EXTRAS

  • ¼ cup powdered sugar

Instructions

  1. If using almonds (or other nuts the toast them first before chopping). Place the nuts in a single layer on an ungreased baking / cookie sheet. Bake 5 to 8 minutes or until they are slightly golden, remove immediately from the pan to a clean bowl to cool, then finely chop.
  2. Melt the chocolate, milk and butter until smooth, either in the microwave or bain-marie.
  3. Break the cookies into small pieces and place in a large bowl, add the sifted cocoa, sugar, salt and chopped nuts to the bowl and combine.
  4. Add the the melted chocolate mixture to the dry ingredients and stir to combine well. If you find the mixture too dry then add a bit more milk (warm) to bring it together.
  5. On a large piece of parchment paper place the mixture and roll into a log shape approximately 11-12 inches (30-31 cm) , wrap with the paper and refrigerate approximately 2-3 hours or overnight.  Before serving, roll in the powdered sugar. Slice and serve. Enjoy!

Notes

  • Substitute almonds with walnuts, hazelnuts, or pistachios as desired for variation.
  • Incorporate 1-2 tablespoons of rum, brandy, or orange liqueur instead of some milk for added flavor.
  • Use milk chocolate or a mix of milk and dark chocolate if preferred; ensure good quality chocolate for best taste.
  • Wrap well and refrigerate; chocolate salami keeps 3-4 days in the fridge.
  • Freeze wrapped whole or in slices for up to three months; allow 20 minutes at room temperature before slicing frozen salami.
