Description

Crema di Caffe combines freshly brewed strong coffee, sweetened with granulated sugar, which is cooled prior to mixing. Cold heavy cream is whipped to soft peaks and then slowly combined with the chilled coffee while continuing to whip. This process creates a cream that is thick yet light with a delicate coffee aroma and flavor balanced by the sugar's sweetness. The final texture is fluffy and spoonable, suitable for small servings.

The coffee used should be strong, ideally espresso, to provide enough boldness to stand out against the cream. Sweetness adjusts by adding 2 to 4 teaspoons of sugar depending on taste. The cream's fat content supports the thickening when whipped, turning the mixture into a lightly aerated coffee cream.

Before serving, the mixture is chilled for about an hour to firm up and develop flavor integration. Presentation in small glasses makes it a refined coffee treat, with a dusting of cocoa or chocolate flakes adding contrast in flavor and appearance.

  • 1/4 cup coffee strong
  • 2-4 teaspoons granulated sugar
  • 1 1/4 cups heavy cream or whole or whipping cream

*depending on how sweet you like your coffee, (I add 1 1/2 teaspoons, but I don't take sugar in my coffee and it wasn't very sweet, I probably could add another teaspoon).

Instructions

  1. Prepare a strong coffee (espresso is best if you have it), add the desired amount of sugar to the hot coffee, then refrigerate it until very cold. (I like to make it the night before).
  2. In a medium bowl beat the cold whipping cream until soft peaks appear. Slowly drizzle in the cold coffee while you continue beating. Beat until thickened. Cover the bowl with plastic wrap and refrigerate for about an hour. Gently stir together before serving in small glasses (a little bigger than an espresso cup), sprinkle with cocoa or chocolate flakes if desired.
