This great summer side gets an Italian makeover with prosciutto and roasted red peppers.

Ingredients
- 5 medium potatoes halved or whole, boiled in water and cooled
- ⅓ cup jarred roasted red peppers chopped
- 2 green onions chopped
- 1 large celery stalk chopped
- salt and pepper to taste
- ¾ cup mayonnaise
- 1 Tbsp. red wine vinegar
- 1 tsp. granulated sugar
- 1 tsp. ground mustard powder
- ½ tsp. paprika
- 5-6 lices prosciutto crisped in a fry pan, and crumbled
- 2 Tbsp. chopped fresh parsley
Instructions
- Slice the potatoes into large bite sized chunks and add them to a large bowl. Add in the roasted red peppers, green onions, and celery. Add salt and pepper to taste. Mix together the mayo, vinegar, sugar, mustard and paprika. Add to the potatoes. Fold in about 3/4 of the prosciutto. Cover and chill until ready to serve. Top with the remaining prosciutto and parsley.
