Instructions
- Line a 9x13 inch baking pan with foil. Preheat oven to 425 degrees F.
- Add the prepared potatoes and garlic to the baking sheet, add olive oil and toss to coat all sides. Arrange the sausage links on top of the potatoes in a single layer. Add the tomatoes to the pan and gently toss to combine. Sprinkle with herbs, salt, and pepper.
- Bake for 30-35, or until potatoes pierce through with a fork. You can open the oven and stir from time to time to ensure the dish cooks evenly. Serve hot. Mangia! (Eat)
Notes
- Cooking Time - The cooking time may vary based on the size of your sausages. If they are smaller links (5 in a package), check them after 18 to 20 minutes. If they are larger (3 to 4 in a package), they will likely take closer to 25 minutes.
- Foil- I recommend aluminum foil to line your sheet pan, it keeps the sausage from sticking to the bottom of the pan and makes cleanup much easier. I do not like using parchment paper since it tends to steam the meat and veggies rather than crisp them.
- Make sure not to overcrowd the pan or the meats and veggies won't roast as well in the oven.
