Description
The recipe mixes lump crab meat with finely diced shallot and beaten eggs to bind the ingredients together. A seasoning blend of panko breadcrumbs, Tabasco green jalapeno hot sauce, dry mustard powder, and salt is incorporated for texture, heat, and flavor. The crab mixture is spooned into greased mini muffin tins to create individual bite-sized portions. Chilling the mixture for at least 30 minutes helps the bites hold their shape during baking.
Baking is done at 350°F for 20 to 25 minutes, allowing the tops to become lightly browned and the crab fully cooked without drying out. The panko adds a subtle crunch within the soft crab base. The jalapeno-flavored hot sauce provides a mild heat without overpowering the delicate crab taste.

Ingredients
- 1 lb crab meat lump
- 1 shallot
- 2 egg
- 1/2 cup panko bread crumbs
- 1 Tablespoon hot sauce Tabasco Green Jalapeno flavor
- 1/2 teaspoon mustard powder dry
- 1/2 teaspoon salt
Instructions
- Dice the shallot finely and gently mix the shallot, the crab meat and the eggs together.
- Combine the bread crumbs, Tabasco Sauce, mustard and salt and sprinkle over the crab meat mixture.
- Gently mix all the ingredients.
- Spray two mini-muffin tins with cooking spray. Add 1 T of crab mixture to the tins.
- Refrigerate the muffin tins for at least 1/2 an hour, or until time to cook.
- Preheat the oven to 350.
- Bake the crab bites for 20-25 minutes until lightly brown on top.
