Jamie olivers low fat caesar salad dressing

Adapted from Jamie Oliver, this is more like a green goddess dressing and is utterly delicious.

Ingredients
- 110 ml yogurt
- 1 Tbsp red wine vinegar
- 6 anchovy fillet
- 1 Tbsp Worcestershire sauce
- 2 Tbsp basil pesto if you don't have fresh basil
- 1 t Dijon mustard
- 1 Tbsp lemon juice
- 40 g Parmesan Cheese or pecorino
- 3 Tbsp olive oil
- salt to taste
- black pepper to taste
Instructions
- Place all the above ingredients into a food processor or liquidizer and whiz it up until it is well combined.
- Store in a sealed container in the fridge and use as required.
Notes
- Use good quality mayo if you prefer or half may and half yogurt. Play around with the ratios to make your perfect dressing. Add a cup of baby spinach leaves to make it a green goddess
