Description
Japanese Rice Recipe uses 300 grams of Japanese short-grain rice and 1⅔ cups of water. The rice is rinsed under cold water until clear, drained, and soaked in water before cooking. It is brought to a boil and then simmered with the lid closed to trap steam. After simmering, the rice rests off the heat to complete the steaming process. This technique results in rice that is soft and slightly sticky, ideal for eating with chopsticks and complementing many Japanese meals.
The rice is washed to remove excess starch without over-washing, which preserves texture. Soaking allows the grains to absorb water evenly. Cooking over high heat brings the water to boil quickly without opening the lid, then reducing to low heat cooks the rice evenly without scorching. The resting period lets moisture redistribute for a consistent texture throughout the pot.
Fluffing the rice with a wet paddle at the end helps separate the grains without crushing them, maintaining the characteristic chewiness and slightly sticky surface expected in Japanese rice.

Instructions
- Put the 300 grams Japanese short-grain rice in a sieve and wash it in cold water until the water runs mostly clear.
- Drain the rice well and add it to a pot with high sides and a lid.
- Add the 1 ⅔ cup water and cover the pot with the lid. Let this soak for at least 30 minutes.
- When the rice is done soaking, turn the stove on to high heat and bring the water to a boil. Do not open the lid once you've turned the heat on.
- Once the water comes to a full boil, turn the heat down as low as possible and set a timer for 10 minutes.
- When the timer goes off, turn off the heat and let the rice steam for an additional 10 minutes.
- Once the rice is done steaming, open the lid and use a wet rice paddle or spatula to fluff the rice.
