Description

This Katsudon recipe starts with pre-cooked tonkatsu-style pork cutlets sliced into narrow strips. Onion slices soften in bubbling dashi stock combined with mirin, sugar, and soy sauce, creating a flavorful broth. The sliced pork is added to warm through in the sauce. Then, lightly beaten eggs are poured over the pork and sauce, cooking briefly so the eggs remain partially runny and silky rather than fully firm.

The layering of the pork and egg mixture over steamed white rice creates a comforting dish where the sweet-savory sauce infuses the pork slices and rice. Ingredients

  • 1/4 cup dashi stock
  • 1/4 onion onion
  • 1 1/2 cups rice cooked
  • 1/2 tbsp mirin
  • 1/2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 egg egg
  • 1 piece pork cutlet tonkatsu style
  • 1/2 tbsp green topping

Instructions

  1. Thinly slice the onion and cut the Tonkatsu into 1.5 cm (0.6inch) wide slices.
  2. Lightly beat the eggs in a bowl and set aside.
  3. Pour Dashi stock in a shallow frying pan and bring it to boil over medium heat.
  4. Add sliced onion and cook till the onion softens.
  5. Add Mirin, Sugar and Soy sauce and cook it for a few minutes.
  6. Place the sliced Tonkatsu in the saucepan and pour the eggs over the Tonaktsu.
  7. Cook for a further couple of minutes until the eggs are half cooked and slightly runny.
  8. Serve rice in a large rice bowl.
  9. Slide the Tonkatsu and egg and sauce over the rice.
  10. Topp with chopped green shallots(scallions) or Mitsuba.

Notes

  • Pork can be substituted with chicken or beef cutlets if desired.
  • Top with fresh garnishes such as chopped scallions, mitsuba, or shiso leaves for added aroma and color.
