Ingredients
- 8 ounce Bacon
- ½ medium onion
- 2 teaspoon fresh garlic minced
- ¼ cup white wine
- 1 ½ cup heavy cream
- ½ cup grated Parmesan cheese plus more for garnish
- 16 ounce spiralized zucchini
- salt and pepper to taste
Instructions
- Measure out and prepare all ingredients. Dice the onion.
- Cook the bacon on both sides until the slices are crispy. Place the cooked bacon on a paper towel and set aside.
- With the bacon fat in the pan, add the diced onion. Cook the onion until translucent.
- Add the garlic to the pan. Mix together well.
- Add white wine to the pan and cook until half the wine is absorbed.
- Add heavy cream to the pan and bring it to a boil. Once boiled, lower the heat to low.
- Add the parmesan cheese into the pan. Stir until combined well and cook until sauce starts to get thick, about 1-3 minutes.
- Add the spiralized zucchini to the pan and toss everything together well. Season with salt and pepper.
- Chop the bacon into bite sized pieces. Put the zoodles in a bowl and top with bacon pieces and parmesan cheese.
