Keto Arugula Salmon Roll
Description
This recipe starts by blending fresh arugula, pine nuts, and olive oil to capture peppery and nutty flavors. Eggs and grated Parmesan are added and blended until smooth to create a cohesive batter that bakes into a thin, tender egg sheet. Baking at 350°F for 15 minutes cooks the mixture without drying it out.
Once cooled, cream cheese is evenly spread over the egg layer, and thinly sliced smoked salmon is layered on top. The sheet is then carefully rolled to form a spiral roll, combining creamy, smoky, and herbal notes in each bite. Refrigerating for about an hour helps the roll set and makes slicing easier.
This roll is ideal served chilled as a keto-friendly appetizer or light meal. It highlights the fresh bitterness of arugula with the smoothness of cream cheese and the richness of smoked salmon, creating a satisfying texture contrast and balanced flavor profile.
