Keto Blueberry Sauce

Keto Blueberry Sauce is a naturally sweetened topping made by gently simmering fresh blueberries with monk fruit sweetener, lemon juice, and water. As the berries break down, they produce a thick sauce that can be served warm or cooled over desserts like ice cream or pancakes, adding fresh berry flavor without added sugar.

Description

This Keto Blueberry Sauce relies on fresh blueberries cooked with powdered monk fruit sweetener, lemon juice, and water over medium-low heat until the berries burst and the mixture thickens. The sauce’s tartness comes from lemon juice complementing the sweetness from monk fruit sweetener, allowing for a reduced-sugar fruit topping suitable for ketogenic diets.

The texture can be left with some berry chunks or smoothed by blending to preference. It has a rich, fruity flavor with a balance of sweet and tart that enhances breakfast foods or desserts. The sauce stores well in the refrigerator for several days in an airtight container.

The recipe suggests a typical serving size of about 1 ½ tablespoons, making it a flavorful but moderate condiment. It can also be drizzled over cheesecakes or other treats.

Ingredients

Servings
  • 12 ounces blueberries fresh
  • ¼ cup Monk Fruit Sweetener powdered, or allulose
  • 1 tablespoon lemon juice fresh
  • ¼ cup water

Instructions

  1. Add the blueberries, Swerve, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes.  The berries will start to break down and the sauce will thicken as it cooks.
  2. Allow to cool before serving.  If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency.  Serve over ice cream, pancakes or cheesecake. Store leftovers in an airtight jar for several days in the fridge.

Notes

  • Typical serving is about 1 ½ tablespoons of sauce.
  • Store leftovers in an airtight jar in the fridge for several days.
  • Blend the sauce for a smooth consistency if preferred.
