Keto Caesar Dressing

This Keto Caesar Dressing combines soft-boiled egg, anchovies, apple cider vinegar, lemon juice and zest, parmesan, garlic, and olive oil blended into a smooth, creamy sauce. The result is a tangy, savory dressing with a balanced umami flavor, suitable for salads, dips, or sandwich spreads.

Description

The preparation begins with soft-boiling an egg for about six and a half minutes, then peeling it once cooled. The egg is blended with anchovies, garlic, apple cider vinegar, lemon juice and zest, and finely grated parmesan cheese. Olive oil is slowly drizzled in while blending to emulsify the ingredients into a velvety dressing.

This dressing is rich and tangy with depth from anchovies and parmesan, and brightness from lemon. It pairs well with Caesar salads but can also serve as a dip for vegetables or a flavorful spread for burgers and sandwiches.

It makes approximately 200ml and can be stored in the refrigerator in an airtight container for up to one week. The recipe notes options to adjust serving size and add fresh chives for garnish.

  • 1 egg large
  • 5 anchovies canned, in oil
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon lemon approximately ½ lemon, juice and zest
  • ¼ cup parmesan 25g, finely grated
  • 1 garlic clove
  • cup extra virgin olive oil 80ml

Instructions

  1. Soft-boil the egg for 6 ½ minutes. Drain and run cold water over the egg, then peel.
  2. Put the egg in a food processor together with the garlic, anchovies, apple cider vinegar, lemon juice and zest plus the grated parmesan. Blend, then drizzle in the olive oil with the motor running.
  3. Blend until smooth. Add an optional sprinkle of chopped fresh chives or pepper.

Notes

  • The dressing yields about 200ml and serves 4 generous 3-tablespoon portions but can be stretched to 6 smaller servings.
  • Store in an airtight container in the refrigerator for up to one week.
  • Use on Caesar salad, crudités dip, roasted vegetables, or as a sandwich spread.
  • Optional: add chopped fresh chives or pepper for extra flavor.
  • If using a Nutribullet or similar blender, blend all ingredients together, then stir in chives if used.
