Keto Chocolate Ice Cream

Ingredients

  • 3 ½ cups heavy cream
  • 2 ounces sugar-free semi sweet chocolate bar chopped
  • ¾ cup allulose
  • cup unsweetened cocoa powder
  • 5 egg yolks
  • 1 teaspoon instant coffee
  • 1 teaspoon vanilla extract
  • ¼ teaspoon xanthan gum
  • Pinch of salt

Instructions

  1. Place the insert to your ice cream maker in the freezer overnight.
  2. Add the heavy cream, unsweetened cocoa powder, instant coffee and salt to a saucepan, whisk and heat until it’s just about to simmer.
  3. In a mixing bowl, add in the allulose and egg yolks. Whisk for a few minutes, until they are pale in color.
  4. Whisk in a ladle full of the heavy cream mixture to temper the eggs, then repeat once more.
  5. Pour the egg mixture into the saucepan and simmer on low for 8-10 minutes, stirring often, until it thickens enough to coat the back of a spoon.
  6. Whisk in the xanthan gum, vanilla extract and the chopped chocolate.
  7. Once the chocolate has melted, remove from the heat and pour into a bowl through a fine mesh sieve.
  8. Cover with plastic wrap that is touching the custard and chill in the fridge for at least 4 hours or overnight.
  9. Pour the custard into your ice cream maker and churn for 25-30 minutes, according to the instruction for your model.
  10. Transfer the ice cream to an ice cream storage container in the freezer.
