  • 6 slices Low carb banana bread
  • 2 egg large
  • 2/3 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • kosher salt dash
  • 2 Tablespoons butter

Instructions

  1. Slice six pieces of low carb banana bread.
  2. In a medium size mixing bowl beat together egg, cream, vanilla, cinnamon, nutmeg and salt.
  3. Heat an iron skillet or griddle over medium-high heat and add butter to grease pan. Ensure the whole pan is covered with butter.
  4. Place egg mix in a pie plate and dip each slice in egg mix soaking each side of the bread.
  5. Put on the prepared skillet or griddle and cook. You should hear a sizzle (1-2 minutes) before flipping to cook the other side.
  6. Repeat if your skillet or griddle is not large enough to cook all pieces at once.
  7. Serve with your favorite toppings.

Notes

  • If the egg mixture is too thick to easily dip the slices, you can thin it with a few tablespoons of water, milk, or almond milk.
