For the Salad

  • 1 English cucumber sliced into half moons
  • 1 cup cherry tomato halved
  • cup yellow bell pepper sliced
  • cup kalamata olives pitted
  • cup red onion sliced
  • 6 ounces feta cheese cubed

For the Dressing

  • cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon oregano dried
  • 1 clove garlic minced
  • 1 teaspoon Monk Fruit Sweetener or allulose
  • 1 teaspoon Dijon mustard
  • Pinch salt
  • Pinch black pepper

Instructions

  1. In a large mixing bowl add in the cucumbers. Then add in the tomatoes, yellow pepper, red onion, Kalamata olives and feta cheese. Then set aside.
  2. In the bowl of a bullet blender, mini chopper or immersion blender, add in all the dressing ingredients. Blend until fully combined.
  3. Pour over the salad and gently toss, making sure everything is well coated.
  4. You can chill it in the fridge for an hour before serving or serve right away. Add a dusting of dried oregano, fresh chopped parsley or mint right before serving. You can also crumble a few cubes of feta over the top as well.
