Keto Greek Salad and Dressing
Description
The Keto Greek Salad and Dressing consists of a medley of fresh vegetables including sliced cucumber, cherry tomatoes, yellow bell peppers, kalamata olives, and red onions, complemented by cubed feta cheese. This combination offers a refreshing array of textures from crunch to creaminess. The accompanying dressing is emulsified from olive oil, red wine vinegar, lemon juice, dried oregano, minced garlic, a touch of monk fruit sweetener for mild sweetness, Dijon mustard, and a pinch of salt and black pepper.
Mixing the dressing in a blender or chopper yields a smooth, well-combined vinaigrette that evenly coats the salad ingredients. The salad can be served right after tossing or chilled for an hour to meld the flavors. Fresh herbs like oregano, parsley, or mint can be added before serving along with additional crumbled feta for extra flavor and garnish.
This salad suits as a light side dish or a standalone low-carb meal. Its ingredients promote freshness and balance between savory feta, tangy dressing, and varied vegetable textures, fitting ketogenic dietary preferences without added sugars or starches.
