Keto Mock Apple Muffins (Gluten-Free)

These Keto Mock Apple Muffins use my Mock Applesauce to give them lots flavor and keep them moist!  They taste just like a slice of apple cake, but without all the carbs!

Ingredients

  • 1 ¾ cups Super Fine Almond Flour
  • ¼ cup oat fiber see notes
  • ½ cup Keto Mock Applesauce
  • 2 eggs
  • cup sour cream
  • cup heavy cream
  • ¼ cup brown swerve
  • cup Swerve confectioners
  • 2 teaspoons baking powder
  • 2 teaspoons apple pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon lemon zest
  • 1 teaspoon Natural Apple Flavoring
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350F.
  2. In a mixing bowl, combine the almond flour, oat fiber, salt, baking powder, apple pie spice and cinnamon, then whisk to combine.
  3. In a separate bowl, combine the remaining ingredients and mix using a hand mixer until well combined. Add in the dry ingredients and mix, just until combined.
  4. Using an ice cream scooper, scoop the batter into silicone muffin liners, or a muffin pan that’s been sprayed with nonstick spray.
  5. Bake for 20-22 minutes or until a toothpick, when inserted, comes out clean. Serve warm or at room temperature and store leftovers in the fridge or freezer. These are also great served warm with some butter smeared over them!

Notes

  • Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. It helps give a more traditional texture and that's why I use it so often. Check out all the Keto Oat Fiber Recipes you can make!
  • To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
