Roast Beef and Asparagus Roll Ups are a 4 ingredient, easy low carb lunch, dinner, or snack idea, that can even be served as a keto appetizer at parties!

Ingredients
- 1 pound deli roast beef thinly sliced
- 1 pound asparagus approximately 36 thin spears
- 8 ounces cream cheese
- 1 tablespoon horseradish
Instructions
- Steam the asparagus so it is tender but crisp, approximately 2-3 minutes depending on thickness. When done run under cold water, pat dry, and set aside.
- In a bowl stir together the cream cheese and horseradish until it is thoroughly combined.
- Spread approximately 1 tablespoon of cream cheese on each slice of roast beef, add three spears of asparagus and roll the roast beef up.
- Refrigerate in an airtight container until ready to serve.
Notes
- Note: You can cook your asparagus to whatever level of tenderness you prefer. I like mine with just a little crispness to them so they aren't limp when they hang out of the roast beef. If you prefer less crunch it's not a problem!
