Keto Salted Caramel Sauce (Sugar-Free)

This Keto Salted Caramel Sauce is a creamy, sugar-free alternative made with heavy cream, butter, and low-carb sweeteners. Simmered carefully to develop rich caramel notes, it balances salty and sweet with pure vanilla aroma and a silky texture. It suits keto diets while providing a luscious topping for desserts or snacks.

Description

The sauce begins by melting unsalted grass-fed butter with allulose and brown monk fruit sweetener over low heat, simmering gently to integrate and slightly caramelize the sweeteners. Once combined, heavy cream and salt are added cautiously due to bubbling, and the mixture is returned to low heat with frequent whisking to prevent separation while thickening for 15-20 minutes to the desired consistency.

Finally, pure vanilla extract is stirred in off heat to enrich the flavor. The resulting caramel sauce thickens further as it cools, achieving a smooth and creamy texture that coats spoon or dessert evenly without using sugar.

This sauce can be refrigerated in an airtight container and gently reheated before use to restore fluidity. It provides a rich flavor without traditional sugars, suitable for those monitoring carbohydrate intake.

Ingredients

Servings
  • 1 ¼ cups heavy cream
  • ½ cup butter grass fed, unsalted
  • ½ cup allulose
  • ¼ cup brown monk fruit sweetener or allulose
  • ½ teaspoon  vanilla extract pure
  • ¼-1/2 teaspoon salt

Instructions

  1. Melt the butter in a saucepan, then add in the sweeteners. Simmer on low for 5 minutes, watching it very carefully.
  2. Remove from the heat, then add in the heavy cream and salt. It will bubble up a bit, so be careful!.  Return to low heat and whisking often, cook for another 15-20 minutes, or until your desired thickness is reached.
  3. Remove from the heat and stir in the vanilla.  Allow to cool slightly before serving.
  4. The caramel will thicken as it cools.  When you are ready to use again, gently reheat in a saucepan or microwave. Store in an airtight jar in the fridge.

Notes

  • Use grass-fed, unsalted butter for best flavor and creaminess.
  • Simmer sweeteners carefully to avoid burning; watch pan closely during initial step.
  • Add cream slowly to control bubbling and prevent splatter.
  • Store sauce in an airtight jar in the refrigerator; gently reheat before serving as it thickens when chilled.
  • Makes approximately 1 and one-third cups of sauce.
