Description
This Keto Sweetened Condensed Milk recipe uses heavy cream sweetened with monk fruit sweetener or allulose, combined with butter and finished with vanilla extract. The mixture simmers over low heat for about 20-30 minutes, reducing by nearly half and thickening to a consistency similar to traditional sweetened condensed milk. Stirring frequently is important to prevent scorching.
The buttery, creamy texture complements the sweetness, making it an effective substitute in recipes that require sweetened condensed milk but need to remain low in carbohydrates. After cooking, the mixture thickens further as it cools and can be loosened by gentle warming or adding a small amount of hot water before use.
Once cooled to room temperature, the condensed milk should be refrigerated and used within 5-7 days. Its richness and sweetness lend themselves to keto desserts, coffee sweetening, or other low-carb applications.
Ingredients
- 2 ¼ cups heavy cream
- ½ cup Monk Fruit Sweetener or allulose
- ¼ cup butter
- ¼ teaspoon vanilla extract
Instructions
- Add all of the ingredients, except the vanilla extract to a medium saucepan. Simmer on low heat for 20-30 minutes or until thickened and reduced by almost half.
- Mine took exactly 28 minutes. Be sure to stir often and don't walk away from it. The mixture will thicken further as it cools.
- Remove from the heat and whisk in the vanilla extract . Allow to come to room temperature, then store in the fridge for 5-7 days. When you are ready to use it in a recipe that calls for Sweetened Condensed Milk, pop in the microwave for 6-8 seconds and it will loosen up perfectly! Or add a tiny bit of hot water and stir!
