Kisir is a bulgur-based mezze found in Turkish and Kurdish cuisines, that is similar to tabbouleh. The main ingredients are fine bulgur, parsley and tomato purée.

Ingredients

Servings
  • cups bulgur fine
  • cup water boiling
  • 1 onion , thinly sliced
  • ½ cup olive oil
  • 3 tablespoons tomato puree
  • 1 tablespoon pepper paste fresh pepper paste, Turkish name 'biber salçası'
  • 1 mini cucumber , diced
  • 1 small bunch flat leaf parsley chopped
  • 10 leaves lettuce cut into thin strips
  • 1 large tomato , peeled, seeded and diced
  • 5 small scallions , thinly sliced
  • 2 small lemon freshly squeezed, plural
  • 3 tablespoons pomegranate molasses pomegranate molasses
  • salt
  • ½ teaspoon pul biber (chili pepper flakes)

Instructions

  1. In a large bowl, add the fine bulgur then pour the boiling water over it, and mix with a spoon.
  2. Cover the bowl and let the bulgur swell, while preparing the rest of the recipe.

Sauce

  1. In a skillet, heat the olive oil and add the chopped onion.
  2. Fry over medium heat for 3 minutes, stirring with a wooden spoon then add the tomato purée and the salçası biber (fresh pepper paste).
  3. Mix everything well, cover and cook over medium heat for 5 minutes.
  4. Stir the bulgur with a fork.
  5. Pour the sauce over the bulgur and mix so that the bulgur is well impregnated with the sauce.
  6. Let cool for 1 hour at room temperature.
  7. Add the cucumber, tomato, parsley, lettuce, and scallions to the bulgur. Also add the lemon juice and pomegranate molasses.
  8. Season with salt and add the chili pepper flakes.
  9. Serve chilled, in a large dish or in small individual portions.
