Korean Beef Meal Prep Bowls
Description
The ground beef is browned with garlic over medium heat to develop flavor and crumble texture. The sauce is prepared by whisking together brown sugar, soy sauce, sesame oil, ground ginger, red pepper flakes, and black pepper, which is then added to the beef to create a savory, mildly sweet, and slightly spicy glaze. The simmer finishes tenderizing the meat and allows the flavors to meld.
The bowls are assembled by placing cooked rice as the base, topped with the Korean beef mixture and steamed broccoli florets. The broccoli provides a fresh, tender-crisp contrast to the rich meat and sauce. Using steamed frozen broccoli florets is recommended for convenience and efficiency.
This meal prep option is practical for advance cooking, as the sealed containers can be refrigerated and reheated in the microwave. Garnishing with green onions and sesame seeds before serving adds freshness and texture contrast.
Ingredients
- 1 pound ground beef 90% lean, lean
- 3 garlic cloves, minced
- 1/4 cup brown sugar packed
- 1/4 cup soy sauce reduced-sodium
- 2 teaspoons sesame oil
- 1/4 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes crushed
- 1/4 teaspoon black pepper
- 2 cups white rice cooked, or brown rice
- 2 cups broccoli steamed, florets
Instructions
- In a large skillet cook the ground beef and garlic breaking it into crumbles over medium heat until no longer pink.
- In a small bowl whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper.
- Pour over the ground beef and let simmer for another minute or two.
- To assemble the bowls, place 1/2 cup cooked rice into four sealable containers. I like to use leftover rice or prepackaged cooked rice for convenience.
- Place 1/2 cup of cooked Korean beef into the containers.
- Add 1/2 cup cooked broccoli florets into the containers. I like to use frozen florets in steam safe bags because it makes it easy!
- Seal the containers and store in the refrigerator until ready to eat. Warm in the microwave, garnish with green onions, and sesame seeds and enjoy!
