Korean Braised Potatoes (Gamja Jorim)
Description
This Gamja Jorim recipe begins by cutting a large potato into cubes, soaking briefly if prepared in advance to prevent browning. The cubed potatoes are pan-fried in vegetable oil without stirring initially to allow a crust to develop on one side, then gently turned to crisp the other sides. The dish’s sauce combines soy sauce, maple syrup, rice wine (or mirin), and water, poured over the potatoes and reduced while simmering.
The simmering with a lid softens the potatoes while thickening the sauce, yielding cubes with a tender center and slightly crisp exterior glazed in sweet-savory sauce. A finishing drizzle of sesame oil and garnishes of chopped green onions and toasted sesame seeds add aroma and texture.
This side is commonly served alongside Korean meals to complement grilled or braised proteins, highlighting the home-style balance of sweet and umami flavors. The straightforward cooking technique and accessible ingredients make it a practical dish to add variety to potato preparations.
