  • 1 large potato cubed

  • 1 teaspoon rice wine or mirin

Garnish:

  • 1 teaspoon sesame oil
  • 1 tablespoon green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Cut the potatoes into a small cubes.
  2. If you're cutting the potatoes ahead of time, soak in cold water.
  3. Drain the potatoes and pat dry.
  4. Heat a frying pan over medium high heat.
  5. Add 1 tablespoon vegetable oil to the pan.
  6. Add the cubed potatoes into the frying pan and let them fry on one side for a few minutes (don't be tempted to move the potatoes).
  7. Once the potatoes have developed a crust, gently toss so that the rest of the edges fry up.
  8. In a small bowl, combine the soy sauce, maple syrup, rice wine (if using) and water. Give it a stir.
  9. Pour the sauce into the pan and coat the potatoes.
  10. Lower the heat to a simmer and cover with a lid.
  11. Let the potatoes braise for 5-7 minutes, until soft and tender. Keep an eye on how quickly the sauce is thickening.
  12. If it's too thick, add a splash of water.
  13. Remove from heat.
