Kung Pao Brussels Sprouts

This recipe transforms Brussels sprouts into a spicy and nutty stir-fry with a Kung Pao-inspired sauce. The sprouts are peeled and quartered, then tossed in a bold sauce made with tamari, dark soy, sesame oil, and chili paste. Cooking in an air fryer or oven crisps the sprouts while keeping them tender inside. Paired with roasted peanuts and garnished with sesame seeds and green onions, the dish offers contrasting textures and flavors.

Description

Kung Pao Brussels Sprouts reimagine the classic Chinese dish by using Brussels sprouts as the main vegetable. After peeling and quartering, the sprouts are combined with dried, deseeded red chilies and a savory sauce containing tamari, dark soy sauce, rice vinegar, agave syrup, sesame oil, ginger, garlic, and chili paste. Cornstarch in the sauce helps it coat the sprouts evenly.

The dish is cooked either by air frying or roasting in the oven until the sprouts develop crispy edges while remaining tender inside. Adding roasted peanuts toward the end adds a crunchy texture that complements the sprouts and spicy sauce. Optional garnishes like sesame seeds, red pepper flakes, and green onion slices enhance both flavor and presentation.

Use fresh, similarly sized Brussels sprouts to ensure even cooking. The recipe allows adjusting heat levels and sauce quantity based on preference. These sprouts can be served as an appetizer or as a side dish alongside Asian-style mains and rice.
