Kutia
Description
The main ingredient in Kutia is soaked wheat, which is softened by boiling for several hours until tender. The preparation involves beating the soaked wheat to loosen the bran, rinsing it, and slowly simmering it until cooked through. Separately, raisins and poppy seeds are soaked to soften before being combined with warmed honey and crushed walnuts. Orange rind pieces provide a subtle citrus contrast.
Once combined, the ingredients are mixed and allowed to rest for one to two hours, allowing the flavors to meld. For a more liquid consistency, uzvar—a traditional Ukrainian dried fruit compote—can be added. The resulting dish offers a balance of textures from the chewy wheat, crunchy nuts, and soft dried fruit, with the natural sweetness of honey uniting these elements. Kutia holds cultural significance and is often part of holiday meals.
Ingredients
- 3 cups wheat ¾ lb, white
- ¼ cup honey 2 oz
- 1 cup poppy seeds 4 oz)
- 1 cup walnuts 4 oz, crushed
- everal pieces orange rind
- 1 cup raisins (prunes or cranberries may also be used)
Instructions
How to Make Kutia:
- Rinse the wheat and cover it with water. Leave to soak for 24 hours.
- Place the soaked wheat in a cheese bag and beat it well with a kitchen mallet or a pin until the bran starts comes off.
- Rinse the wheat thoroughly.
- Place the wheat in a pot with plenty of water and bring to a boil.
- Simmer for approx. 2 – 3 hours.
- While your wheat is being cooked, prepare the raisins and poppyseeds. Soak them in warm water for 1-2 hours.
- Remove and drain the wheat.
- Place the honey on alight heat or microwave for 15 seconds.
- Mix the honey, raisins, poppyseeds, and crushed walnuts.
- Mix everything and let sit for 1-2 hours before serving.
- You may want to make your kutia a bit more liquid. If that’s the case, prepare uzvar beforehand and pour ½ uzvar to kutia. Then mix well.
