Lemon Herb Hummus Vinaigrette

Ingredients

Servings
  • 1/2 cup original hummus
  • 1 lemon zested
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons chopped fresh rosemary
  • 2 teaspoon chopped fresh oregano
  • 1 teaspoon fresh thyme leaves
  • water as needed
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. In a mixing bowl add all the ingredients except the kosher salt and the black pepper. 
  2. Whisk vigorously to combine. Thin out the dressing with water until you reach your desired consistency. I like to add water tablespoon by tablespoon so it does not get too runny. 
  3. Taste the vinaigrette and season with the desired amount of kosher salt and black pepper.
