Lemon Poppyseed Muffins is the perfect sweet treat. The muffins have a ton of lemon flavor and are baked with a soft center and a sweet glaze.

Ingredients

Servings

For the Muffins:

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 Tablespoons poppy seeds
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup whole milk Greek yogurt
  • 1/3 cup whole milk
  • 1 1/2 tablespoon fresh lemon zest
  • 2 Tablespoons fresh lemon juice
  • 1/2 cup unsalted butter melted and cooled
  • 2 large eggs room temperature
  • 1 ½ teaspoons vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 Tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and line a muffin tin with muffin liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, poppy seeds and salt.  Set aside.
  3. In a separate bowl, whisk together the yogurt, milk, lemon zest, lemon juice, butter, eggs and vanilla extract until combined and smooth.
  4. Slowly stir in the dry ingredients with a spatula until just combined.  Be careful not to over mix the batter.
  5. Pour the batter evenly into the muffin tin.
  6. Bake for 15-17 minutes until a toothpick inserted into the center of the muffins comes out clean and the top of the muffins are golden brown.
  7. Let the muffins sit for 10 minutes in the pan and then move them to a wire rack to cool completely.
  8. In a small bowl, whisk together the glaze ingredients.  Drizzle the glaze over the muffins and then they are ready to serve and enjoy

Notes

  • Store the leftover muffins in an airtight container or bag at room temperature for up to 3-5 days.
